Reindeer husbandry has long been vital to the Sami. The animal is central to the culture – not least in Sami cuisine, which revolves around local and seasonal ingredients.
Known for its lean and flavourful quality, reindeer meat features in many traditional Sami dishes.
🦌 'Suovas' – salted and slightly cold-smoked reindeer meat – is a staple in Sami cuisine, and it is often served with bread. A traditional way to prepare suovas is to roast the meat over an open fire.
🦌 'Gurpi' is a type of sausage where salted reindeer mince has been wrapped in reindeer tripe and then cold-smoked. Fried in slices, it works well in many culinary settings – both modern and traditional.
🐟 Mountain fish is also essential to Sami cuisine.
🦌 A Sami take on pancakes is to prepare them with reindeer blood and flour. These are often served with suovas and raw stirred lingonberries or lingonberry jam.
Sweden's four other national minorites are Jews, Roma, Swedish Finns and the Tornedalers. The cultures, traditions and languages of all the national minorities have special protection in Swedish law, and so does their right to information, to participate and to influence.
